Sev Tameta nu Shaak is a beloved Gujarati sabzi that perfectly balances sweet, tangy, and spicy flavors. Made from ripe tomatoes and topped with crunchy sev, it’s often served with rotli or bhakri and is a quick-fix comfort food in many Gujarati homes.
Ingredients:
- 4 ripe tomatoes, finely chopped
- 2 green chilies, chopped
- 1 tsp ginger paste
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1/4 tsp cumin seeds
- 1/4 tsp hing (asafoetida)
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander-cumin powder
- 1–2 tsp sugar (adjust to taste)
- Salt to taste
- Water as needed
- Nylon sev (for topping)
- Fresh coriander for garnish
Method:
- Heat oil in a pan and add mustard seeds. Let them crackle.
- Add cumin seeds, hing, green chilies, and ginger paste. Sauté for a few seconds.
- Add chopped tomatoes and cook until soft and mushy.
- Add turmeric, red chili powder, coriander-cumin powder, sugar, and salt.
- Add a little water and simmer for 5–7 minutes to make a slightly thick curry.
- Just before serving, top with nylon sev and garnish with coriander.
Tips:
- Add sev only before serving to retain the crunch.
- Pair with bajri rotla, wheat rotli, or even khichdi.
- Use desi tomatoes for more tanginess.
