Khaman Dhokla is one of the most iconic snacks from Gujarat. This steamed, fluffy, and savory cake made from gram flour is not only light on the stomach but also packed with flavor. It’s a perfect breakfast, tea-time snack, or even a party starter!
🧂 Ingredients:
For the Dhokla Batter:
- 1 cup gram flour (besan)
- 1 tbsp semolina (rava/sooji)
- 1 tbsp lemon juice
- 1 tsp Eno fruit salt or baking soda
- 1 tsp sugar
- 1/2 tsp turmeric powder
- Salt to taste
- 3/4 cup water (adjust as needed)
For the Tempering:
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 2 green chilies (slit)
- A few curry leaves
- 1/4 cup water
- 1 tsp sugar (optional)
For Garnish:
- Freshly chopped coriander
- Grated coconut (optional)
👨🍳 Method:
- In a bowl, mix gram flour, semolina, turmeric, sugar, lemon juice, and salt.
- Slowly add water and whisk to make a smooth, lump-free batter.
- Just before steaming, add Eno and mix quickly. The batter will become airy.
- Pour into a greased steaming plate or tray and steam for 15–20 minutes.
- Let it cool slightly, then cut into squares.
Tempering:
- Heat oil in a small pan, add mustard seeds, sesame seeds, curry leaves, and green chilies.
- Add water and sugar, boil for 1 minute.
- Pour the tempering evenly over the dhokla pieces.
Garnish:
- Sprinkle coriander and grated coconut on top.
- Serve with green chutney or sweet tamarind chutney.
💡 Tips:
- Always add Eno just before steaming.
- Don’t over-steam or the dhokla may become hard.
- You can use a pressure cooker without a whistle to steam.
