Sukhdi / Gol Papdi is a quick, wholesome fudge made with whole wheat flour roasted in ghee, sweetened with jaggery, and flavored with cardamom. Its nutty melt-in-mouth squares are a staple in Gujarati homes for instant energy or as a winter treat.
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup ghee
- 3/4 cup grated jaggery
- 1/2 tsp cardamom powder
- 2 tbsp chopped almonds (optional)
Method:
- Heat ghee in a heavy pan. Add wheat flour and roast on low flame, stirring, until aromatic and golden.
- Turn off heat, add jaggery and cardamom, and mix quickly; jaggery should melt completely in the flour’s heat.
- Spread mixture in a greased tray. Smooth and pat; garnish with nuts if using.
- While warm, cut into pieces. Serve at room temperature or store airtight for a week.
Tips:
- Always add jaggery off-heat to avoid crystallization.
- Roast flour thoroughly for sweetness and aroma.
- Add a spoon of poppy seeds for extra nutrition.
