Shrikhand is a classic dessert made from thick strained yogurt, sweetened and blended with cardamom and saffron, sometimes with mango or fruit puree. Silky, tangy, and ultra-creamy—serve chilled for best flavor on hot days or after a hearty meal.
Ingredients:
- 2 cups hung curd (Greek yogurt or strained dahi overnight)
- 1/2 cup powdered sugar (adjust to taste)
- 1/2 tsp cardamom powder
- Pinch saffron (soaked in 1 tbsp warm milk)
- 2 tbsp chopped pistachios and almonds
- 1–2 tbsp mango pulp or rose water (optional)
Method:
- Place yogurt in muslin cloth, hang for 6–8 hours (or overnight) to drain whey and make it thick and creamy.
- Whisk hung curd till absolutely smooth.
- Mix in powdered sugar, cardamom, saffron milk, and any optional flavorings. Chill for 1–2 hours.
- Garnish with nuts, serve cold as dessert or with puri.
Tips:
- For smoothest texture, use Greek yogurt or strain curd very well.
- Flavor with fruit purees for variety (e.g. mango for aamrakhand).
- Always serve chilled.
