Shrikhand is a classic dessert made from thick strained yogurt, sweetened and blended with cardamom and saffron, sometimes with mango or fruit puree. Silky, tangy, and ultra-creamy—serve chilled for best flavor on hot days or after a hearty meal.

Ingredients:

  • 2 cups hung curd (Greek yogurt or strained dahi overnight)
  • 1/2 cup powdered sugar (adjust to taste)
  • 1/2 tsp cardamom powder
  • Pinch saffron (soaked in 1 tbsp warm milk)
  • 2 tbsp chopped pistachios and almonds
  • 1–2 tbsp mango pulp or rose water (optional)

Method:

  1. Place yogurt in muslin cloth, hang for 6–8 hours (or overnight) to drain whey and make it thick and creamy.
  2. Whisk hung curd till absolutely smooth.
  3. Mix in powdered sugar, cardamom, saffron milk, and any optional flavorings. Chill for 1–2 hours.
  4. Garnish with nuts, serve cold as dessert or with puri.

Tips:

  • For smoothest texture, use Greek yogurt or strain curd very well.
  • Flavor with fruit purees for variety (e.g. mango for aamrakhand).
  • Always serve chilled.
