Sev Khamani is a savory, spongy snack made from crumbled dhokla (or ground chana dal), seasoned with green chili, ginger, and a tadka, then topped generously with sev, coconut, and pomegranate. A favorite from Surat!
Ingredients:
- 1 cup chana dal (soaked 3–4 hours)
- 2–3 green chilies
- 1-inch ginger
- 1 tbsp lemon juice
- 1/2 tsp turmeric powder
- 1/2 tsp Eno fruit salt or baking soda
- Salt & sugar to taste
- 1/4 cup grated fresh coconut
- 1/4 cup fine sev
- 2 tbsp pomegranate seeds (optional)
- Chopped coriander for garnish
For Tempering:
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/4 tsp hing
- 8–10 curry leaves
Method:
- Coarsely grind soaked chana dal with green chili and ginger (no water).
- Mix in turmeric, lemon juice, salt, and sugar. Stir in Eno or soda just before steaming.
- Spread batter in a greased thali and steam for 12–15 minutes.
- Cool, then crumble dhokla by hand or pulse in a mixer for a coarse texture.
- Heat oil, add mustard, hing, and curry leaves. Pour tadka on crumbled mixture, mix to coat.
- Top with sev, coconut, coriander, and pomegranate.
Tips:
- Use leftover dhokla for a quick version.
- Garnish with sev just before serving for maximum crunch.
- Adjust sugar and lemon for perfect Surat-style taste.
