Rava Dhokla is a quick, fluffy steamed snack made from semolina, yogurt, and a touch of spices. Balanced with a classic mustard and curry leaf tempering, these dhoklas are a soft, spongy treat for any time of day.
Ingredients:
- 1 cup rava (suji/semolina)
- 1 cup yogurt (sour or plain)
- 1/2 cup water (as needed)
- 1 tsp ginger-green chili paste
- 1/2 tsp Eno fruit salt or baking soda
- 1/2 tsp turmeric powder
- 1 tbsp lemon juice
- 1 tsp sugar
- Salt to taste
For Tempering:
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- Curry leaves
- 2 green chilies, slit
Method:
- Combine rava, yogurt, ginger-chili paste, turmeric, lemon, sugar, and salt. Rest 20 minutes.
- Add water for a pouring batter consistency. Mix in Eno/baking soda just before steaming.
- Pour into a greased thali. Steam for 12–15 min until a toothpick comes clean.
- Cool, cut into squares.
- Heat oil, add mustard, sesame, curry leaves, and green chilies for tempering; pour over dhokla.
- Serve with chutney.
Tips:
- Don’t overmix after adding Eno—steam immediately for fluffiness.
- Add spinach or grated carrot for color and nutrition.
