Ram Khichdi is a colorful, mixed-vegetable khichdi from Kutch, combining rice, dal, potatoes, peas, and a medley of spices. Hearty and wholesome, it’s a “one-pot meal” perfect for families and festive occasions alike.
Ingredients:
- 1 cup rice
- 1/3 cup tuvar (arhar) dal
- 1/2 cup diced potatoes
- 1/2 cup peas (fresh or frozen)
- 1 carrot, diced
- 1/4 cup chopped beans
- 1 chopped tomato
- 1 tbsp ghee or oil
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 1/4 tsp hing
- Salt to taste
- 4 cups water
Method:
- Wash rice and dal together. Soak for 15 minutes, drain.
- Heat ghee/oil in cooker, add cumin and hing. Sauté tomato, all chopped veggies, and dry spices for 2 minutes.
- Add rice, dal, salt, and water. Stir thoroughly.
- Pressure cook 3 whistles, then simmer for 3–4 minutes. Let pressure release.
- Mix, mash lightly if needed, and serve with papad, yogurt, and pickle.
Tips:
- Add a spoonful of ghee for flavor and easy digestion.
- Substitute or add veggies based on the season.
