Muthiya Shaak is a home-style Gujarati curry where steamed or fried muthiya (veggie dumplings) are cooked in a tangy tomato gravy, making a hearty and protein-rich main. Serve with roti or rice for a perfect comfort meal.
Ingredients:
For Muthiya:
- 1 cup wheat flour
- 1/2 cup besan
- 1 cup grated bottle gourd or cabbage
- 1 tsp ginger-green chili paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/4 tsp hing
- 1/2 tsp baking soda
- 2 tbsp oil
- 2 tsp sugar
- 1–2 tbsp lemon juice
- Salt to taste
For Gravy:
- 2 tomatoes, chopped
- 1 onion, diced
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/4 tsp hing
- 1/2 tsp turmeric powder
- 1 tsp chili powder
- 1/2 tsp coriander-cumin powder
- 1 tsp sugar
- Salt to taste
- Chopped coriander for garnish
Method:
- Mix all muthiya ingredients to make a soft dough. Shape into logs, steam 18–20 min, slice.
- For gravy: heat oil, temper mustard seeds, hing, add onion. Sauté until soft, add tomatoes and dry spices, cook until soft and pulpy.
- Add sliced muthiya. Mix and simmer for 5–7 min so dumplings soak flavor.
- Garnish with coriander. Serve with roti or rice.
Tips:
- Use leftover muthiya, or fry them for extra crunch before adding to gravy.
- For richer curry, add a spoon of yogurt or coconut milk.
