Moong Dal Khichdi is a classic, nourishing one-pot dish of rice and moong dal, seasoned mildly for ultimate comfort. Soft, light, and easy to digest, it’s beloved in Gujarati homes for both everyday meals and gentle recovery food.
Ingredients:
- 1 cup rice
- 1/2 cup split yellow moong dal
- 1 tsp cumin seeds
- 1/4 tsp hing
- 1/2 tsp turmeric powder
- 2 tbsp ghee
- 4 cups water
- Salt to taste
Method:
- Wash and soak rice and dal for 15–20 minutes. Drain.
- Heat ghee in a pressure cooker, add cumin and hing. Sauté briefly.
- Add drained dal and rice; stir well. Mix in turmeric and salt.
- Add 4 cups water. Close the lid, cook for 2 whistles then simmer 2–3 min; let pressure release naturally.
- Mix well, mash slightly if desired. Serve with kadhi, pickle, and papad.
Tips:
- Adjust water for softer or firmer consistency.
- Add peas or diced carrots for more nutrition.
