Kobi Bateta nu Shaak: Cabbage-Potato Simplicity, Gujarati Style!

Kobi Bateta nu Shaak (“cabbage potato sabzi”) is a simple, dry curry of cabbage and potato cooked with basic Gujarati spices. It’s quick, hearty, and great with roti or puri, often found in tiffins across Gujarat.

Ingredients:

  • 2 cups finely shredded cabbage
  • 2 small potatoes, diced
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp hing
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander-cumin powder
  • 1 tsp sugar (optional)
  • Salt to taste
  • Chopped coriander for garnish

Method:

  1. Heat oil in a pan, add mustard seeds and hing.
  2. Add diced potatoes and cover for 3–4 min.
  3. Add shredded cabbage, turmeric, chili, coriander-cumin powder, sugar, salt.
  4. Mix well, cover and cook on low heat until potatoes and cabbage are tender (5–8 min).
  5. Uncover and sauté to evaporate any extra moisture. Garnish with coriander and serve hot.

Tips:

  • For variation, add green peas or carrot pieces.
  • Use a wide pan for even cooking and minimal moisture.
