Kobi Bateta nu Shaak (“cabbage potato sabzi”) is a simple, dry curry of cabbage and potato cooked with basic Gujarati spices. It’s quick, hearty, and great with roti or puri, often found in tiffins across Gujarat.
Ingredients:
- 2 cups finely shredded cabbage
- 2 small potatoes, diced
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/4 tsp hing
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander-cumin powder
- 1 tsp sugar (optional)
- Salt to taste
- Chopped coriander for garnish
Method:
- Heat oil in a pan, add mustard seeds and hing.
- Add diced potatoes and cover for 3–4 min.
- Add shredded cabbage, turmeric, chili, coriander-cumin powder, sugar, salt.
- Mix well, cover and cook on low heat until potatoes and cabbage are tender (5–8 min).
- Uncover and sauté to evaporate any extra moisture. Garnish with coriander and serve hot.
Tips:
- For variation, add green peas or carrot pieces.
- Use a wide pan for even cooking and minimal moisture.
