Bhindi Sambhariya (Stuffed Okra) is tender okra pods filled with a tangy-spicy peanut masala and shallow-fried till aromatic. Each bite bursts with nutty flavors, making it a favorite with rotlis or dal-rice.
Ingredients:
- 300g tender okra (bhindi), trimmed and slit
- 3 tbsp roasted peanut powder
- 2 tbsp grated coconut (fresh or dry)
- 1 tbsp sesame seeds
- 1 tbsp coriander-cumin powder
- 1 tsp red chili powder
- 1 tsp amchur (dry mango) or lemon juice
- 1/2 tsp sugar
- Salt to taste
- 2 tbsp oil
Method:
- Mix peanut powder, coconut, sesame, spices, amchur, sugar, and salt to make stuffing.
- Stuff each bhindi with masala.
- Heat oil in a wide pan. Place bhindis in a single layer, cover and cook on low till tender. Turn occasionally.
- Serve hot with phulka or dal-chawal.
Tips:
- Use fresh, small okra for best results.
- Don’t add water—cook covered to soften naturally.
- Leftover masala can be sprinkled on top before serving.
