Muthiya Shaak: Dumplings in Curry, Gujarati Home Classic!

Muthiya Shaak is a home-style Gujarati curry where steamed or fried muthiya (veggie dumplings) are cooked in a tangy tomato gravy, making a hearty and protein-rich main. Serve with roti or rice for a perfect comfort meal.

Ingredients:

For Muthiya:

  • 1 cup wheat flour
  • 1/2 cup besan
  • 1 cup grated bottle gourd or cabbage
  • 1 tsp ginger-green chili paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/4 tsp hing
  • 1/2 tsp baking soda
  • 2 tbsp oil
  • 2 tsp sugar
  • 1–2 tbsp lemon juice
  • Salt to taste

For Gravy:

  • 2 tomatoes, chopped
  • 1 onion, diced
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/4 tsp hing
  • 1/2 tsp turmeric powder
  • 1 tsp chili powder
  • 1/2 tsp coriander-cumin powder
  • 1 tsp sugar
  • Salt to taste
  • Chopped coriander for garnish

Method:

  1. Mix all muthiya ingredients to make a soft dough. Shape into logs, steam 18–20 min, slice.
  2. For gravy: heat oil, temper mustard seeds, hing, add onion. Sauté until soft, add tomatoes and dry spices, cook until soft and pulpy.
  3. Add sliced muthiya. Mix and simmer for 5–7 min so dumplings soak flavor.
  4. Garnish with coriander. Serve with roti or rice.

Tips:

  • Use leftover muthiya, or fry them for extra crunch before adding to gravy.
  • For richer curry, add a spoon of yogurt or coconut milk.
