Sev Khamani: Surat’s Favorite Crumbly Snack—Loaded with Crunch!

Sev Khamani is a savory, spongy snack made from crumbled dhokla (or ground chana dal), seasoned with green chili, ginger, and a tadka, then topped generously with sev, coconut, and pomegranate. A favorite from Surat!

Ingredients:

  • 1 cup chana dal (soaked 3–4 hours)
  • 2–3 green chilies
  • 1-inch ginger
  • 1 tbsp lemon juice
  • 1/2 tsp turmeric powder
  • 1/2 tsp Eno fruit salt or baking soda
  • Salt & sugar to taste
  • 1/4 cup grated fresh coconut
  • 1/4 cup fine sev
  • 2 tbsp pomegranate seeds (optional)
  • Chopped coriander for garnish

For Tempering:

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/4 tsp hing
  • 8–10 curry leaves

Method:

  1. Coarsely grind soaked chana dal with green chili and ginger (no water).
  2. Mix in turmeric, lemon juice, salt, and sugar. Stir in Eno or soda just before steaming.
  3. Spread batter in a greased thali and steam for 12–15 minutes.
  4. Cool, then crumble dhokla by hand or pulse in a mixer for a coarse texture.
  5. Heat oil, add mustard, hing, and curry leaves. Pour tadka on crumbled mixture, mix to coat.
  6. Top with sev, coconut, coriander, and pomegranate.

Tips:

  • Use leftover dhokla for a quick version.
  • Garnish with sev just before serving for maximum crunch.
  • Adjust sugar and lemon for perfect Surat-style taste.
